I love food; it is one of the things that bring me happiness. One of my favorite college roomies was exactly like me... in regards to food, we would go running every morning at 6:00 AM, so we could justify eating the foods we enjoyed. If either one of us were having a bad day we would tell each other it was "Christi Day" or "Ashlee Day" and take the other out for a treat. Even now in my 30's, I get excited when someone takes me out for a treat (totally brightens my day).

I am going to put a few of my favorite recipes down so you can enjoy some of the meals that make me happy. ENJOY!

Chicken Chipotle Tortilla Soup :



Soup Base:
6 Carrots Chopped
1 Small Onion Coarsely Chopped
2 Chicken Breasts (Shredded)
3 Quarts Water (12 cups)
2 Tablespoons Chipotle Sauce
6 Chicken Bouillon Cubes (more or less depending on taste)




These are the toppings


Toppings:

Tortilla Strips
Avocado Cubed
Cheddar Cheese Shredded
1 Lime Wedged




Cooking Instructions:
In large pot combine water, bouillon, carrots and onion bring to boil.
In a separate pan, cook chicken with the chipotle sauce till chicken is cooked (this means no more pink).
Combine chicken mixture with stock (water/carrot mixture) and let cook for 15 minutes on medium heat.
Serve in individual bowls adding lime (squeeze juice from wedge), Cheese, Avocado, and tortilla strips.
This is everything you will need to make the soup.
This is my favorite tortilla soup ever!



Note:  This is what I use for the Chipotle flavoring.  I use half a can, try and get as much sauce and cut up a few of the peppers.

This soup has a little kick to it, so if you are serving children use a teaspoon of sour cream to balance out the chipotle.  This little bug was a happy camper after I added a little sour cream.

Peanut Butter/Banana Protien Shake :



1 Banana
1-2 tablespoons Peanut Butter
1 Cup Milk (Soy Milk, Almond Milk)
1 Scoop Protien Powder
1 Handful Spinach
5-6 Ice Cubes





Throw it in a blender and blend till the ice is smooth!!!



Note:  This is a super fast easy recipe and you can even modify it.  Most mornings I just add Banana, Ice, Milk and a Peanut Butter, throw it in the blender and drink it on my way to work.




Zucchini - Tomato Toss:
Ingredients for the meal.

1 Zucini thinly sliced
1 Yellow Squash Thinly sliced
4 Roma Tomato's (or what ever tomato's you have) Diced
Angle Hair Pasta
1 Clove Garlic finely grated or Chopped
Salt to taste
Basil to taste
Olive Oil or butter
Chicken (optional)
Cheese to melt on the top. (optional)

Seasonings: Salt, olive oil, basil and garlic.
Cooking Instructions:

In a pan add Olive Oil, Garlic and basil. 

Note:  You can also add chicken at this point.  If you are going to add chicken make sure it is cooked through before adding vegetables.
 
Once mixed add tomatoes, yellow squash, and zucchini stirring occasionally till slightly tender. (I like a little bit of crunch to my zucchini and squash).

This is what it should look like in the pan.  Don't over cook so your veggies as mushy.
 
Serve it up on angel hair pasta and sprinkle a little bit of cheese on the top.


Dinner is served!
 This is one of my favorite meals to make.  It tastes really good and is healthy and fast. 

Note: this time I used whole wheat angel hair pasta and it was good.  Not quite as good as normal angel hair but it was okay.
