There is something about summer that makes me want to eat super fresh.
As I mentioned in a earlier post, I am in a food co-opt with my married friends. Being in the co-opt gives me the opportunity to eat fresh all month long and it gives me the opportunity to think of new things to cook. Every month I get something new in my basket, something I usually wouldn't buy and every month I have to think of new things to make with those fruits and veggies.
This month we got: bananas, limes, pineapple, pears, fuji apples, oranges and tangelos, mini-carrots, broccoli, corn, iceberg lettuce, green onions, jicoma and cilantro.
Last night I used three of these items in a yummy salad!
Pear Chop Salad by Ashlee B.
1/4 Iceberg lettuce wedge chopped
1/2 Pear Sliced
1/8 Jicoma Chopped
5-10 basil leaves (picked from my garden) and Chopped
1 Handful of Pecans Chopped
Feta Cheese Cubed
I used Trader Joe's Champagne Pear Vinaigrette... Because it's yummy.
